- Altitude: 650–850 metres a.s.l.
- Soil: Volcanic lava flow
- Climate: Cool and ventilated with consistent changes between night and day
- Density and yield: 6,000 plants per hectare, 3 kg/plant
- Age and training: 10–30 years. Free standing, vertical position
Vinification
Harvesting in October. Lengthy and controlled maceration. Ageing 6 months in wood and 24 months in bottle.
Tasting Notes
Intense ruby red with violet reflections. Ripe and balsamic fruit with a scent of lava. In the mouth: sapid, dynamic, with a long and constant structure.
Food Pairings
Excellent with red meat, well seasoned. Perfect accompaniment for hard, aged cheese and lamb.
